Dolphins, Taxi to town & Food @ Reef Club

My husband & I will be esacaping the winter rains of Northern Coastal California to spend the week of Valentines day in Cozumel. Can someone please tell me about swimming with the dolphins. I know it's a little spendy but worth it for me. Where do you swim with the dolphins and how much time should I plan on.
We will be staying @ the Reef Club, I understand it is on the south part of the island. How long will it take to get into downtown and what will the approx. cost be per taxi ride?
Does anyone know about the food @ the Reef Club, and when they say "dress code required", what exactly does that mean? Shoes shorts & shirts required or coat & tie or what???
Also, I have not read anything on the Botanical Gardens. What is it like? Is there also a underwater aquarium or something. Any comments or info will help.
