I would recommend planning a trip to Cozumel and doing a day trip to Tulum. From Cozumel, take the ferry to Playa Del Carmen. Your will be greeted by people offering tours. Grab a tour to Tulum, they usually combine it with Xel Ha (ecological park, lagoon, beach, snorkelling, dolphins) or Coba (ruins).
I'm not sure there is enough to keep you busy in Tulum overnight.
